at 2308h the last cycle of stretches and folds is complete STOP
tonight loaf is a 60% hydration STOP
only double-0 flour STOP
the dough is softer than usual STOP
given the higher hydration STOP
but not sticky STOP nor hard to work with STOP
bubbles rise everywhere STOP
as the loaf bulk ferments in the warmth of the 28C oven STOP
of course STOP the oven is not turned on STOP
Robespierre reminds me that we are only 11 days away STOP
from the 25 of April STOP 25 Aprile STOP
our liberation day STOP
after years of drought STOP we found an event here in Dublin STOP
where we'll both sing songs of rebellion STOP songs of resistance STOP
with our lungs full of joy STOP
