A bulletin on the life and (up)rising of my sourdough starter: Robespierre
despite two moments of panic STOP
one at 0400h this morning STOP and one 5h later STOP
caused by the fear of over-proving STOP
the dough that rested about 25h STOP
is ready to cook at 1100h STOP
the resulting loaf is light STOP
bubbles are even STOP
flavours are developed STOP
this long-proving experiment was useful STOP
to measure how strongly cold-proving preserves the dough STOP
but for almost-everyday kneading STOP
which is my use case STOP
it doesn't bring enough advantages STOP
as everything however STOP it's a great trick to keep in one's sleeve STOP
might circumstances suddenly change STOP
and it is required to postpone oven time STOP
Robespierre thinks Italy won't qualify tonight against Bosnia STOP
i have lived in both places and i'd give anything to see Bosnian's excitement right now STOP
