proving time of around 14h did its job STOP
dough is firm STOP spongy STOP ready to be scored STOP
cooked at 230C with heat only from the bottom STOP
added four ice cubes to oven to produce vapour STOP
the resulting loaf is risen STOP inside it's dry and well springy STOP
the crumb is regular STOP easy to butter up STOP
today the loaf enjoys pancetta STOP
while Yuji Ohno and his jazz STOP
fill the air STOP
